Vitamin B1 - Thiamine: A water
soluble crystalline compound that is essential for in the metabolizing of sugars
in body tissues. It plays an important role in the relaying of electrical
impulses (messages) in the nerves and muscles. Vitamin B1 also
contributes to a healthy cardiovascular and nervous system. Because of its
pivotal role in the transmission of signals in the brain and nervous system, a
shortage of thiamine can have a profound effect on mood and alertness.
Although available in many foods (pork, chicken, liver,
eggs, leafy vegetables, cereals and grains) because it is water soluble it is as
