Clary Sage is found wild in Europe and the United States where it may have
spread after the herb was imported for cultivation by the early European
settlers. The Clary Sage plant grows to about three feet, has large leaves and
can be described as hairy. The earliest recordings of this herb in Europe
is in Germany where it was added to convert some wines to Muscatel, hence the
name Muscatel Sage. In beer brewing it was used as an additive or substitute for
hops adding its rather strongly sedative properties to the alcoholic effect.
